When was the last time you bought kale?
It’s packed with nutrients, antioxidants, and it’s touted for anti-inflammatory agents. Best of all, it’s delicious and it’s cheap.
1 bunch kale
6 walnuts broken into pieces
1 small lemon juiced
3 tablespoons extra virgin olive oil
Shred the kale. Emulsify the olive oil and lemon juice. Add the kale and toss. Season to taste and add walnuts. This salad is ready to go as soon as it is made, but it gets even better if it sits for a while, letting the dressing ‘soften’ the leaves.
Mix it up by using hazelnut oil instead of olive oil and crushed hazelnuts instead of walnuts. Add orange or yuzu juice and a little zest to zing it up.
